Chardonnay Igt Lazio
Varietal origin: grape variety originally from Burgundy, from where it gradually spread throughout the world. Its name derives from Chardonnay, the homonymous village of Mâconnais in Burgundy. Prefer warm temperate climates, clayey and calcareous soils, preferably hilly.
Harvest period: third decade of August
Vinification system: in white after short cold maceration
Aging: 3 months of aging in steel on the fine lees – 20% ferments in wood for 10 days and remains there until bottling (6-7 months).

Exclusive Viticultural Practices: Guyot pruning. Chardonnay is a very early variety, therefore it is sensitive to spring frosts. It can also withstand higher yields. The bunches, exposed to the sun, lead to more structured wines.
Exclusive Oenological Practices: the alcoholic fermentation is carried out at a low temperature, with clean musts. Use of selected yeasts, specific for Chardonnay. The malolactic fermentation is carried out completely.
